Pizza Dough
Ingredients:
1½ cups all-purpose flour
½ teaspoon sugar
½ teaspoon salt
1 teaspoon active dry yeast
½ cup warm water (43-46°C)
1 tablespoon olive oil
Instructions:

In a small bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.

In a large bowl, sift and mix flour and salt.

Add olive oil to the yeast mixture, then pour into flour.

Mix until a shaggy dough forms, then knead 8-10 minutes until smooth and elastic.

Place in an oiled bowl, cover with plastic wrap, and let rise 2 hours or until doubled.

Punch down, divide in half.

Roll out dough and place on a baking sheet.

Dock the dough and bake in a preheated oven of 200°c for 5 - 7 minutes

Once removed from the oven, apply pizza sauce and mozzarella along with any additional toppings.

Bake again for 10 minutes, or until the base is a light brown and the cheese is melted

Ingredients:
4 large ripe tomatoes (about 800g) or 2 cups canned tomatoes
2 tbsp Olive Oil
4 cloves of Garlic, minced
1 small onion, finely chopped (optional)
1 tsp dried oregano
1 tsp dried basil
1/4 to 1/2 tsp red chilli flakes (adjust to taste)
1/2 to 3/4 tsp salt (adjust to taste)
1/2 tsp sugar (optional, balances acidity)
2 tbsp tomato paste (for extra richness, optional)

Instructions:

If using fresh tomatoes, blanch them in boiling water for 2-3 minutes. Peel off the skins, chop, and puree them

Heat olive oil in a pan over medium heat. Sauté the garlic (and onion, if using) until fragrant.

Add the pureed tomatoes (or canned tomatoes) and tomato paste. Stir well.

Add oregano, basil, chilli flakes, salt, and sugar. Mix thoroughly.

Reduce heat to low and simmer the sauce for 12-15 minutes, stirring occasionally, until it thickens to your desired consistency.

Let the sauce cool slightly before spreading it on your pizza dough.
